2 ripe bananas, mashed
½ cup dates (100g), chopped
1 ½ cup organic rolled oats
2 tablespoons organic shredded coconut
2 tablespoons black currants
1/2 tablespoon coconut oil (for baking tray)

Combine mashed bananas, dates, oats, coconut and currants until the mixture becomes a dough-like consistency.

Grease baking tray and pre-heat oven to 170C.

Wet hands and roll mixture into desired size balls between your palms and place on tray.

Bake for 12-15 minutes at 170C .

Makes 6-8 healthy cookies; these will keep for 3-5 days (if they last this long). Store in an airtight container in the fridge to maintain freshness.
